Hi, first in foremost I am a mommy to a brilliant 10-year-old little boy. I am married to my husband Duane, however, he is not just my husband he is my best friend; the one who has seen me fail and succeed, made me laugh and held me when I cry. The lord gave me two wonderful gifts when he put my husband in my life and then my son. We live in TN where I am attending APSU to get my degree in Elementary Education (k-6). We have one Dog, Mackenzie Ann. I owe everything in my life to God, he has blessed me, gotten me through many rough times, and is continuing to work in my life. As of right now, what I do is, I am a full time student, a mommy, a wife, and lastly I teach 4-5th grade life group at my church.

Chicken Left Overs




Left Overs?  WOW!

 

I thought I would share this one today!  The other day Duane smoked a chicken (purple chicken).  The marinated or sauce he puts on the chicken turns it purplish color.  He learned this recipe from a family friend when visiting them in Florida.  Our friend actually beat a well know smoker (griller), whom is on TV a lot for his great abilities with the grill, with this recipe.  Anyhow, we had left over chicken that I needed to do something with, so, I decide to make Chicken Quesadillas.  They turned out amazing!  I pulled the chicken a part into small sections (I just made sure I could fit it in a tortilla wrap).  I placed it a pan with Rotel. While this was warming, I coated the back of the wraps with a butter spray (you can use what you want), placed them on my flat skillet then added the chicken mix and shredded cheese.  I then folded the wrap and cooked one side then flipped and cooked the other.   

Below is the finish product.  The first picture is my husbands, the second one is mine as I am watching my calorie intake. That one also shows the inside a little better :)
