Hi, first in foremost I am a mommy to a brilliant 10-year-old little boy. I am married to my husband Duane, however, he is not just my husband he is my best friend; the one who has seen me fail and succeed, made me laugh and held me when I cry. The lord gave me two wonderful gifts when he put my husband in my life and then my son. We live in TN where I am attending APSU to get my degree in Elementary Education (k-6). We have one Dog, Mackenzie Ann. I owe everything in my life to God, he has blessed me, gotten me through many rough times, and is continuing to work in my life. As of right now, what I do is, I am a full time student, a mommy, a wife, and lastly I teach 4-5th grade life group at my church.

Potato Soup




What I love best about Google is you can find so many recipes.  I normally type in my main ingredient and boom so many to choose.  I like to take a little from this one and a little from that one and create something different, make it mine.  The other day I made homemade potato soup for the first time; don’t judge ;)  This is what I did and my boys loved it.

You will need:

6 potatoes
1 onion
3 cloves of garlic (or more if you really like garlic)
3-4 stalks of celery
3-4 carrot sticks
6-8 cups low sodium or no salt added, chicken broth (depending on how thick you want it)
Salt
Pepper
Season all (opt)
Cajun seasoning (opt, depends if you like a little heat or not)
Heavy whipping cream
3 Tbs All purpose flour 

Toppings:
One package of BACON
Sour cream
Shredded Cheese (any kind you want)

Directions:

First, cut the bacon into chunks; chop up your potatoes, onions, celery, garlic, and carrots 
 
     Second,  fry the bacon in the pot.  Remove bacon (let the kids have a piece lol, my son LOVES bacon) and pour out most of the grease but leave some.

     Third, added onion, celery, garlic, and  carrots cook for about 2 min
  
     Fourth, add potatoes, Keep mixing and cook for about 5 min and then add seasoning (to taste, I just eyed it, go easy you can always added more)

     Fifth, add chicken broth and bring to a low boil let cook till potatoes are soft (10-15 min) Whisk heavy cream and flour together and then add and mix into soup and cook for about another 5 min .

     Once it is finish take about half out in put it in a blender (or food processor), start at low setting and increase speed (this is optional, I did this because it thicken the soup and I do not have a potato masher).  Put back in pot and taste to see if you need more seasoning (salt, pepper, etc)
  
      Place in bowls, add toppings, and serve.

It was delicious!  My husband said he thinks it was even better the next day hahaha.  Hey, if you try it let me know what you think and even add your own twist to it and make it yours (that is what makes this FUN)!  I would also love to know what you added or took away!
